Penne Pasta Summer Salad

Nonna's Pantry presents an awesome summer pasta dish / salad when you want a kick of freshness.
Beautifully balanced flavours, the sweetness of organic vine ripened cherry tomatoes, the slight bitterness of fresh arugula, the mild saltiness of ricotta salata / stagionata and the pungent spiciness of fresh garlic.
Ingredients for 4:
500g Afeltra Penne Rigate
2 cups Arugula (chopped)
1 pint of cherry tomatoes (cut into quarters)
2-3 cloves of garlic (finely chopped)
2-3 tablespoons Frantoia EVOO
1 tablespoon @acetaiagiusti Banda Rossa, 35 years aged balsamico
150g Amatrice Ricotta Stagionata
1. Toss together arugula, cherry tomatoes, garlic, olive oil and balsamico. Rest for 15mins
2. Meanwhile boil 4-5 liters of water and salt well. Cook @premiatopastificioafeltra1848penne rigate al dente and drain.
3. Toss the penne with the arugula tomato mixture.
4. Grate some Amatrice Ricotta Stagionata and sprinkle some on top.
5. Plate, sprinkle some more Ricotta Stagionata on top, and some pepper.
