Ontario peach with stracciatella, mint & basil

Peach season is in! Halved, gently coated with extra virgin olive oil and browned in the cast iron, the gentle maillard on the surface offers great flavour tension that amalgamates with the unctuous deliciousness of the straciatella. Garnished with fresh chopped mint, whole basil leaves, and a couple drops of 15-year old balsamico.
