Taleggio is made with the highest quality of Lombardia milk and in full respect to old time traditions; this is without doubt a first-class cheese, specifically aimed to the most demanding customers. This product is DOP certified. “Denominazione di Origine Protetta” (literally, Protected Origin Denomination): it is the mark granted to products which are born and worked in a specific geographic area. This definition implies that these products’ features are due to that specific environment with its peculiar, natural and traditional factors.
A noble product, with “raw dough" and a washed surface, this cheese is traditionally seasoned in the Valsassina area for a period of 50-60 days. This seasoning process characterizes the cheese and provides it with its natural distinction, culminating in a rosy-brown color with a soft and thin crust. The paste has a characteristic double-texture: it is soft, slightly stringy and straw-yellow in color under the crust; firm, crumbly and white colored inside.
The cheese is often covered with irregular spots of grayish mold. The presence of mold patches on the cheese surface is caused by the natural progression of the seasoning. It’s advised not to sever the moldy patch, but to gently scrape the area.
The fragrance is positively unique, aromatic and even pungent in the more mature cheeses. The taste is sweet and delicate while at the same time slightly sour or tangy towards the inside.
Recommended Use: Taleggio is a typical table cheese, but it is also the ingredient of many dishes. Spread it on fresh bread or crostini; use as a pizza topping.
