Aged for four to six months, Asiago d'Allevo Mezzano stands out for its accentuated personality, characterized by a pleasant, slightly spicy flavor, with notes of hay. The paste is compact, with sparse sparse holes, of medium size, tending to amber yellow in the summer months and white, on the other hand, in winter production. It smells of cream and milk, with a memory of mountain herbs.
