Ricotta is not considered a proper cheese, but it is obtained from the serum. It comes in white paste, with lumpy texture and a sweet taste. The heating causes the precipitation of the serum proteins present, which are sensitive to heat coagulate in flakes. It has to be consumed fresh as "table cheese" or used for special cakes or gourmet dishes.
