Nonna's Pantry presents Toniolo classic Italian cheeses.
The oldest Asiago, closer to the austere tradition of the dairymen of the plateau, is that of Allevo, so called because since its production it is cared for and followed step by step, then 'bred', until completely matured, which in this case is at least three months old. The paste, with a small and sparse hole, is semi-hard and slightly compact; the intense taste recalls the purity of the milk.
