Cuor di Fieno (Heart of Hay) cow's dairy cheese is produced in the traditional method, genuine, just like the families of the past used to do. Still fresh, it is left to mature under the warmth of the hay for at least 90 days. For its maturation, a particularly aromatic and fragrant hay is chosen, grown directly by us to verify its characteristics, which gives the cheese a genuine, fragrant flavor of meadows.
