An interesting authentic product from Valtellina, is the Taragna flour. This is known as “polenta of the mountains” and is a hearty blend of buckwheat and corn polenta. Stir in some taleggio at the end of the cooking process and we promise you that you will experience an authentic mouthful of Lombardy. Serve it hot and pair with thickly cut salami or fresh sausages with mushrooms, onions, sage and garlic. A good wine to pair with this is Barbera d’Asti or if you’re feeling celebratory and bubbly, Franciacorta.
