Soft-paste truffle cheese, washed crust, made from whole goat milk. The cheese has a parallelepiped shape, side of about 19 cm, flat faces, barefoot straight of 7 cm. The average weight of each shape is ca. 2 Kg. And it is consumed after a maturing of about 35 days in crates of pine wood at a temperature of about 5 °c and a humidity 95%. The crust is smooth, soft, thin, yellow-pink. The dough is soft slightly chewy white straw- colored. Sweet taste, slightly sour with a mild flavor typical of the goat cheese that joins the truffle. The appearance of mold on the surface is a natural feature of the product and not a synonym of poor quality.
