It is the evolution of the typical maturing dairy cheese, delicate, dry, rich in aromas and with a small and sparse eye. Selva Mezzano is aged for at least six months; the time necessary to mature the aromas, of flowery meadows and yoghurt, and accentuate the characteristic taste, which contains the best of the very fresh milk used in its processing.
